Editor’s Letter

In a climate of thinking local, reducing food miles, bettering product traceability and welfare standards, this latest edition of A Taste of the West Country recipe book showcases those food and drink businesses from around the region who are achieving this and setting standards.

Many of the producers who are featured in this book offer field-to-fork schemes, while the restaurants source their food and drink from neighbouring towns, villages, or even from their own kitchen gardens.

Every year, there are hundreds of entries into the coveted Taste of the West Awards. This latest edition of A Taste of the West Country is a pairing of the award-winning chefs and producers from Cornwall, Devon, Somerset, Dorset and Wiltshire to bring you special recipes, using the finest local ingredients.

The dishes are created exclusively for this book, straight from the chef’s kitchen. With produce ready available around the region, our clear layout and simple steps make it easy to recreate restaurant-style dishes at home for your friends and family.

Follow these recipes and you will both impress your guests and support our food and drink industry, something I think we all feel is important to do.
